Once frozen, the grapes are picked at night, when the temperatures are coldest, and taken to be pressed.
The pressing also takes place in cold temperatures, so that the water in the grapes remains frozen. The frozen grapes produce only a small amount of juice, since the water in the grape is frozen. Because the grapes have remained on the vine to fully ripen, and because the water is frozen, the juice and the sugars that remain are incredibly concentrated, producing a very flavorful juice. This juice is then fermented to produce ice wine. The resulting product is a very concentrated, sweet wine. The high sugar level also results in a slower fermentation process. So ice wine takes longer to produce than a normal table wine.
There are also wines produced that are called ice wine, but they are produced differently. The grapes are picked earlier, and then frozen before pressing them for their juice. As a result, the flavors of the grapes are not as fully developed as in ice wine. As stated above, these wines are also known as icebox wines.
All of these factors, the particular weather conditions, and the sparse amount of juice from each grape, are what makes ice wine so rare and expensive. Ice wine is usually sold in half bottles, as opposed to regular wine, which typically is sold in 750ml bottles. Most stores do not sell ice wine, and it is hard to find online. Even if you can find it, it may be a bit expensive. But if you can, it is well worth it. Ice wine, because of the sugar content is very sweet, but not cloyingly so. The acid helps to balance out the sweetness.
Once produced, ice wine will sell very quickly. If you find a wine maker with some ice wine, you should do your best to pick up a bottle or two. It will be expensive, but well worth it.

I have been using this book down in Australia for YEARS. I have my favourite recipes from it, that i make time-and-time again: Pistachio, hazelnut and the lemon sorbet are almost always sitting up in my freezer! A great resource for lovers of homemade ice cream….

DO NOT BUY THE KINDLE VERSION!
I bought the Kindle version and found that all of the ingredients and their quanties were missing from the recipes. Of course this makes the recipes kind of useless. This is really too bad because the book looks pretty good. I also bought the Kindle version of the companion volume, “The Ultimate Frozen Dessert Book”, and that book has all the ingredients and is outstanding.
I did contact customer support at Amazon and they refunded my money, and asked that I purchase it again and download it again. I tried this, but it is still the same version that is missing the ingredients. I just thought I’d warn everybody.
I originally got this book and the Ben & Jerry’s Homemade Ice Cream & Dessert Book book together. I used the Ben and Jerry’s book for quite some time because of how much easier the recipes were. Once I started taking the time out to use the recipes in this book, I was well rewarded. I have now recommended this book as the must have ice cream book and have continued to find great recipes in it. My favorite right now is to follow the peanut butter ice cream recipe and replace the peanut butter with Nutella.
I love this product. It keeps wine chilled for a long time and doesn’t take up much space in the freezer. I ordered extras for gifts for friends. The price was a great value too.
It was exactly what the description said it was. I have no complaints. It does the job they said it would.
Bought this for a Christmas gift for my fiance. She loves it, and it works very well. I have not used the more expensive units that you need to add ice, but chilling wine is the end result. Buy with Confidence.
I’ve only used this a few times, but it works very well! I even chilled a warm water bottle to a near icy-drink in just a few minutes. I did find that it works much faster if you put the chiller around the drink, and then stick them in the freezer together. This way, in a few minutes you can chill down a bottle from room temperature.
But if you just want to keep your already-chilled bottle cold, this works like a charm. Good price, too!
Very good for keeping wine chilled without taking up a lot of space. Especially good for going out to dinner when you bring your own wine.
I wouldn’t expect this to really chill a bottle of wine, but it’s sure handy to put over a bottle while it sits on the table. It keeps the wine chilled while sitting out.
I really like the whole idea of the product and it is cute and lightweight and doesn’t take up much room in the freezer. The downside is that it did not chill the wine rapidly (I did a test). In about 10 minutes the wine was cooler, but not cool enough. I’m planning to use them to keep already chilled wine cold, but was hoping to find something that would chill room temperature wine up fast.
This thing works. It is the best wine cooler we have. It is cute, cheap and durable. Now that I have my own, I should get a stack to keep around as hostess gifts.
